A perfumer's organ is a tiered cabinet on which the perfumer arranges their olfactory raw materials — sometimes several hundred bottles — in order to compose their creations. Its staircase-like shape recalls that of a church organ, which is how it got its name. It is in front of this tool that the perfumer selects, doses, tests and adjusts each accord until the final formula is reached.

The comparison with the musical instrument does not stop at its shape. Just as a musician plays with notes arranged on a keyboard, the perfumer works with materials classified according to their nature, their family or their volatility. This organisation is not decorative: it is functional and specific to each creator.

What a perfumer's organ contains

A professional organ can bring together between 1,000 and 3,000 different materials. These materials fall into two main types: natural ingredients and synthetic molecules.

Natural ingredients include essential oils, absolues, resins and extracts. Grasse Rose, Haitian vetiver, Somali frankincense, Indonesian patchouli — so many materials whose quality varies according to origin, harvest and extraction method. These ingredients are precious, sometimes rare, and their price can be very high.

Synthetic molecules, meanwhile, now make up the majority of materials used in perfumery. They make it possible to reproduce scents that cannot be found in nature — white musk, marine notes, certain floral facets — or to achieve a consistency of result that is impossible with plant materials, which vary from season to season. These molecules sometimes come from chemical research, and are sometimes inspired by natural compounds.

On the organ, bottles are generally organised by fragrance families — the major families such as floral, oriental, woody or chypre — or by type of note according to their volatility: top notes, heart notes, base notes. This classification makes it easier to find materials quickly during composition.

How the perfumer works at the organ

Composing a parfum is not an instinctive gesture. It is a methodical process that can take several months, or even several years for complex projects.

The perfumer generally begins with a brief — a commission put forward by a brand or a client, describing the desired world, the target audience, and the budgetary and regulatory constraints. From this framework, they select an initial series of materials from their organ and formulate a first trial, known as a draft or an accord.

Each formula is recorded with precision: the name of each material, the dosage as a percentage, the final concentration in alcohol. This information is now often logged using specialised software, but the manual gesture — pipetting, weighing, mixing — remains central to the day-to-day work.

Trials are evaluated using blotters, those strips of absorbent paper that allow the material to be smelled without applying it to the skin. But the blotter is not enough: the perfumer also tests their formulas on the skin and over time, since a parfum evolves over the course of the hours. Between each evaluation, the perfumer "rests" their nose by breathing neutral air — often simply by turning towards another room or waiting a few minutes. Contrary to popular belief, smelling coffee does not reset the olfactory system: a simple pause is enough.

The perfumer's organ in perfumer training

Learning to work at an organ is one of the central stages in perfumery training. Leading specialised schools — such as ISIPCA in France or the in-house programmes run by major houses — teach future perfumers to memorise hundreds of raw materials, to recognise them blind, and to understand how they interact with one another.

This memorisation is essential. An experienced perfumer knows by heart the scent, behaviour and possible combinations of every material on their organ. It is this mental library, built over years of practice, that allows them to compose with fluency.

Training generally lasts several years, and work at the organ is a daily occurrence from the very first weeks. It begins with simple exercises — reproducing an existing formula, identifying materials blind — before moving on to original compositions.

The perfumer's organ in independent and niche houses

In large commercial perfume houses, organs are often shared between several perfumers and standardised according to the materials listed by the house's suppliers. Industrial logic imposes constraints: some materials are excluded for reasons of cost, others for regulatory reasons linked to allergens or IFRA restrictions.

In the niche perfumery segment, the approach is often different. The perfumer — who is sometimes also the founder of the house — enjoys greater freedom in the choice of materials. Their organ can include ingredients that are rare, costly or regulatorily complex to use on a large scale. It is often this freedom of composition that sets a niche creation apart from a mainstream parfum, beyond mere marketing positioning.

The perfumer's organ is not set in stone. It evolves alongside the perfumer's career, alongside new materials appearing on the market, alongside regulatory restrictions that can withdraw certain ingredients from circulation, and alongside trends that steer research towards new olfactory territories.

Some materials are gradually disappearing from organs — oakmoss, for example, once widely used in classic chypres, is now heavily restricted due to its allergenic potential. Others are appearing, born of chemical research or new extraction techniques such as chromatography or molecular distillation.

The perfumer's organ is therefore both a legacy of the past and a tool in constant motion. Within the space of a single cabinet, it brings together decades of expertise, thousands of materials and the singular method of the person who uses it every day.
