Cichorium intybus France «The sun's fiancée»: this is what chicory was called in Antiquity. Indeed, by opening and closing its flowers depending on the presence or absence of the sun, it seemed to demonstrate through this spectacular heliotropism a close bond with the day star. Could it be its particular relationship with this «almost divine» star that allowed chicory to multiply its healing virtues? Digestive, liver-toning, purifying, soothing… As far back as 1500 BCE, it was revered for its medicinal properties and, in the 17th century, was elevated to the status of a true panacea.
